Homemade Hungarian Sandwich Pockets – Soft, Golden & Perfect for Filling

There is something special about making your own bread for breakfast or sandwiches — especially when the bread itself is part of the fun.
These homemade Hungarian-style sandwich pockets are soft on the inside, beautifully golden on the outside, and shaped so that they naturally open into little pockets ready to be filled with all your favourite ingredients.
And of course, in my Hungarian kitchen, that means plenty of salami, cheese, fresh tomato, cucumber and peppers. 😃
They look impressive, but the dough is actually very simple. The secret is in the shaping: the dough is rolled out, brushed lightly with oil and folded before baking. The oil prevents the layers from completely sticking together, creating those beautiful openings once the rolls are baked.
Perfect for breakfast, brunch, lunchboxes, picnics or an easy family dinner.

Ingredients
For the dough
150 ml warm water
100 ml milk
1½ tablespoons granulated sugar
1½ teaspoons salt
7 g instant yeast
50 ml vegetable oil
440 g all-purpose flour
For brushing between the layers
35 ml vegetable oil
For the top
1 egg yolk
Sesame seeds
How to Make Homemade Sandwich Pockets
1. Make the dough
Add the warm water, milk, sugar, yeast, vegetable oil and salt to a large mixing bowl.
Gradually add the flour and begin mixing until a dough forms.
Knead until the dough becomes smooth, soft and elastic. Depending on your flour, you may need to make a very small adjustment, but try not to add too much extra flour. A softer dough will give you softer rolls.
2. Let the dough rise
Place the dough into a lightly oiled bowl and cover it with a clean kitchen towel or plastic wrap.
Leave it in a warm place until it has approximately doubled in size.
3. Divide and shape
Transfer the risen dough onto your work surface and divide it into equal portions.
Roll each piece into a flat round or oval shape.
Brush the surface lightly with vegetable oil, then fold the dough over itself to create the pocket shape.
The thin layer of oil between the dough is important — this is what helps keep the layers separated during baking and creates the opening for your sandwich fillings.
Arrange the shaped rolls on a baking sheet lined with parchment paper.
4. Let them rest again
Cover the shaped rolls loosely and allow them to rest until slightly puffed.
Meanwhile, preheat the oven to 180°C / 350°F.
5. Add the golden finish
Brush the tops gently with egg yolk and sprinkle with sesame seeds.
This gives the rolls their gorgeous deep golden, glossy finish.
6. Bake
Bake at 180°C / 350°F until beautifully golden brown and baked through, approximately 20–25 minutes, depending on your oven and the size of your rolls.
Transfer them to a cooling rack and allow them to cool slightly before filling.

Turn Them Into a Hungarian Breakfast Sandwich
This is where these little pockets become really fun.
Open the layers and fill them with whatever you love. For my Hungarian-inspired version, I used a combination of:
Hungarian-style salami
Sliced cheese
Fresh tomatoes
Cucumber
Sweet or hot peppers
You can also add Piros Arany, mustard, butter, red onion or your favourite sandwich spread.
There really aren't any rules here. Make them as simple or as loaded as you like!
Other Filling Ideas
These rolls aren't only for Hungarian sandwiches. Try them with scrambled eggs and cheese for breakfast, grilled chicken and vegetables for lunch, tuna salad, egg salad, mozzarella and tomato, or even something sweet like butter and homemade jam.
They are also a great way to use whatever you already have in the refrigerator.

Tips for Perfect Sandwich Pockets
Don't skip the oil between the layers.This is what helps create the pocket instead of allowing the dough to bake together into one solid roll.
Don't make the dough too dry.Add only enough flour to make it manageable. Soft dough creates softer bread.
Give the dough enough time to rise.Rather than watching the clock, watch the dough. It should look noticeably larger and airy.
Don't overbake them.Once they're deeply golden and cooked through, take them out so the inside stays soft.
Storage
Store completely cooled sandwich pockets in an airtight container or bag at room temperature for approximately 2 days.
For longer storage, freeze them once completely cooled. When you're ready to eat them, thaw at room temperature and warm briefly in the oven or air fryer.
They taste surprisingly close to freshly baked again.

Growing up with Hungarian food, breakfast was never just a bowl of cereal. Fresh bread or rolls, salami, cheese, peppers, tomatoes and cucumbers were the kind of simple foods that could turn an ordinary morning into something delicious.
These homemade sandwich pockets take those familiar flavours and make them a little more fun.
