Unlike traditional yeast pastries that require long rising times, this version comes together in just a few minutes. Simply mix everything together, roll out the dough, cut, brush, and bake. That's it!
Growing up in Hungary, pogácsa was always on the table whenever guests arrived, during family gatherings, or simply as an afternoon snack with tea or coffee. Every family has their own version, and this quick cheese pogácsa has become one of my favorites because it's so easy while still tasting just like homemade comfort food.

Ingredients
For the dough
550 g (4½ cups) all-purpose flour
200 g (14 tbsp) butter, softened (or margarine)
7 g (2¼ tsp) instant dry yeast
1 tsp sugar
1 tbsp salt
100 g (⅓ cup + 1 tbsp) sour cream or plain Greek yogurt
2 large eggs
150 ml (⅔ cup) lukewarm milk
100 g (1 cup) grated cheese (Cheddar, Gouda, or Trappista cheese work beautifully)
Up to 100 g (¾ cup) extra flour if needed
For the topping
1 egg, beaten
1 tsp sweet Hungarian paprika (optional but highly recommended)
Instructions
1. Prepare the dough
In a large mixing bowl, combine the flour, instant yeast, sugar, and salt.
Add the softened butter, sour cream (or yogurt), eggs, lukewarm milk, and grated cheese.
Mix everything together until a soft dough forms. If the dough feels too sticky, gradually add a little extra flour until it's easy to handle.
2. Roll and cut
Lightly flour your work surface.
Roll the dough to about 2 cm (¾ inch) thick.
Using a sharp knife, gently score a crisscross pattern on the top without cutting all the way through.
Cut out circles using a cookie cutter or a drinking glass.
3. Brush the tops
Beat one egg and mix in the paprika if using.
Brush the tops generously for that beautiful golden color.
You can also sprinkle a little extra grated cheese on top for an even cheesier finish.
4. Bake
Bake in a preheated 375°F (190°C) oven for 20–25 minutes, or until beautifully puffed and golden brown.
Allow them to cool for a few minutes before serving.
Tips for Perfect Pogácsa
✔ Don't overwork the dough.
✔ Use room-temperature butter for the softest texture.
✔ Freshly grated cheese melts much better than pre-shredded cheese.
✔ Leave enough thickness when rolling the dough—the taller they are, the fluffier they'll become.
✔ These taste amazing both warm and at room temperature.
Storage
Store in an airtight container for up to 3 days.
They can also be frozen for up to 3 months. Simply warm them in the oven for a few minutes before serving, and they'll taste freshly baked again.
