There’s something special about a bowl of warm, homemade lentil soup.It’s the kind of meal that feels like a hug on a busy day — simple, nourishing, and full of flavor.

As a mom who works full-time, I know how valuable quick and affordable dinners are.That’s why this lentil soup is one of my go-to recipes. It’s cheap, filling, and ready in under 30 minutes — perfect for any night of the week.

🥣 Lentil Soup Recipe

Servings: 4  Prep time: 10 min  Cook time: 25 min

Ingredients

  • 1 cup dried lentils (any variety)

  • 1 onion, chopped

  • 2 carrots, diced

  • 2 cloves garlic, minced

  • 1 tomato or 1 tbsp tomato paste

  • 1 tsp paprika (Hungarian, if possible)

  • 4 cups water or broth

  • 1 tbsp olive oil

  • Salt & pepper to taste

Instructions

  1. Heat olive oil in a medium pot. Add onion, carrots, and garlic; sauté until fragrant.

  2. Stir in tomato or tomato paste and paprika.

  3. Add lentils and water/broth; bring to a boil.

  4. Lower the heat and simmer 20–25 minutes, until lentils are tender.

  5. Season with salt and pepper. Add a dash of vinegar or lemon juice before serving if you like a brighter flavor.
