Easy Banana Bread – Quick, Moist and Lunchbox Approved

I got this banana bread recipe from my best friend, and after making it several times, it has become a favorite in our house. My kids absolutely love it, and it takes only a few minutes to prepare. This is one of my favorite recipes for avoiding food waste because those bananas that nobody wants to eat anymore are exactly the ones you need for baking.
Ingredients
½ cup neutral oil
2 large eggs
1 cup granulated sugar
1 teaspoon baking soda
1½ cups all-purpose flour
3 very ripe bananas, mashed
Instructions
Preheat the oven to 350°F (175°C).
Grease a standard loaf pan or line it with parchment paper.
Peel the bananas and mash them well with a fork.
Add the oil, eggs and sugar to a large mixing bowl. Mix until combined.
Stir in the mashed bananas.
Add the flour and baking soda. Mix gently, just until you no longer see any dry flour. Do not overmix the batter.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for approximately 45 minutes, or until the top is golden and a toothpick inserted into the center comes out clean or with only a few moist crumbs.
Allow the banana bread to cool in the pan for about 10 minutes before transferring it to a cooling rack.
Let it cool before slicing—or enjoy a warm slice if your family cannot wait that long!
Optional Additions
The original recipe is delicious exactly as it is, but you can also add:
Chocolate chips
Chopped walnuts or pecans
A little cinnamon
A splash of vanilla extract
Fold any additions into the batter just before pouring it into the loaf pan.

Use very ripe bananas for the sweetest flavor and best texture. Once you add the flour, mix the batter only until everything is combined. Overmixing can make banana bread heavier and less tender.
Every oven is a little different, so begin checking the bread after approximately 40 minutes. If the top is browning too quickly but the center is not ready, loosely cover it with aluminum foil for the remaining baking time.
