Tender shredded chicken, hearty beans, and a rich tomato sauce with one surprising ingredient that takes this recipe to the next level.

Smoky pulled chicken with black beans and pinto beans served in a cast-iron skillet with fresh crusty bread.
Rich, smoky, and packed with flavor! This pulled chicken simmers in a tomato sauce with beans and one unexpected ingredient that makes the sauce absolutely incredible.

I'll be honest—I was skeptical.

When I first read that this recipe called for coffee, I thought there was no way it would work. Coffee... in chicken? It sounded strange!

But after one bite, I completely changed my mind.

The coffee doesn't make the dish taste like coffee at all. Instead, it deepens the flavors, balances the tomatoes, and creates a rich, smoky sauce that tastes like it has been simmering all day. Combined with tender pulled chicken, black beans, pinto beans, and warm spices, this quickly became one of my favorite comfort meals.

The best part? It's incredibly easy to make and perfect for busy weeknights.

Whether you serve it with rice, fresh bread, mashed potatoes, or even inside crispy Hungarian tócsni like I did, this recipe is guaranteed to become a family favorite.
