Homemade Cheeseburger Bombs with Garlic Butter 🍔🧀

These homemade cheeseburger bombs combine two of my favorite things: freshly baked bread and a juicy, cheesy burger filling. 😍
Instead of putting a burger inside a regular bun, everything gets tucked inside soft homemade dough, sealed into a little ball and baked until beautifully golden.
And then — because apparently melted cheese inside freshly baked bread isn't enough 😂 — they're brushed with garlic butter straight from the oven.
The result is a soft, fluffy bun filled with seasoned ground beef and melted cheese. They're fun for dinner, parties, game nights, lunchboxes or anytime you want something a little different from a regular burger.
And yes... they're absolutely made for dipping. 😃
Why You'll Love These Cheeseburger Bombs
They're basically burgers you can hold in one hand — no toppings falling everywhere and no burger sliding out of the bun. 😂
The dough is homemade, soft and slightly rich from the milk, egg and butter, while the inside is savory, cheesy and packed with flavor.
You can also customize the filling easily. Add pickles, change the cheese, make them spicy or even sneak some vegetables inside.
Ingredients
For the Dough
¾ cup (180 ml) warm milk
¼ cup (60 ml) warm water
¼ cup (50 g) granulated sugar
2¼ tsp (7 g) active dry or instant yeast
1 large egg, room temperature
¼ cup (57 g) unsalted butter, melted and cooled
3½–4 cups (420–480 g) bread flour
1 tsp (6 g) salt
1 tbsp olive oil, for greasing the bowl
For the Cheeseburger Filling
1 lb (450 g) ground beef
1 tsp Worcestershire sauce
1–1½ tsp adobo seasoning
1 tsp Italian seasoning
1 tsp smoked paprika
½ tsp black pepper
Pinch of crushed red pepper flakes, optional
6–8 oz (170–225 g) cheddar, mozzarella, Colby Jack or a combination
Finely chopped pickles, optional
Egg Wash
1 egg yolk
1 tbsp heavy cream
Garlic Butter
4 tbsp (57 g) unsalted butter, melted
2–3 garlic cloves, minced
1 tbsp chopped fresh parsley

How to Make Cheeseburger Bombs
1. Make the dough
Combine the warm milk, warm water, sugar and yeast in a large mixing bowl.
Let it sit for 5–10 minutes, until the yeast becomes foamy.
Add the egg and melted, cooled butter and mix until combined.
Gradually add the flour and salt.
Knead for approximately 8–10 minutes, until you have a smooth, soft dough that's slightly tacky but manageable.
You may not need all 4 cups of flour, so add the last portion gradually.
2. Let it rise
Transfer the dough to a lightly oiled bowl.
Cover and leave it in a warm place for approximately 1–1½ hours, or until doubled in size.
Make the Cheeseburger Filling
While the dough rises, cook the ground beef over medium heat until browned.
Drain excess grease if necessary.
Add the Worcestershire sauce, adobo seasoning, Italian seasoning, smoked paprika, black pepper and optional red pepper flakes.
Let the filling cool completely before assembling the buns.
If you're a pickle person, add some finely chopped pickles too. 🥒
Assemble the Cheeseburger Bombs
Once the dough has risen, divide it into 8–10 equal pieces.
Flatten each piece into a small circle.
Place approximately 2 tablespoons of beef filling in the center and add a generous piece of cheese.
Bring the edges of the dough together over the filling and pinch them tightly closed.
Place each ball seam-side down on a parchment-lined baking sheet.
Cover loosely and allow them to rise again for 20–30 minutes.
Bake
Preheat your oven to 375°F / 190°C.
Whisk together the egg yolk and heavy cream and brush it over each bun.
Bake for approximately 18–22 minutes, or until beautifully golden brown.

Don't Skip the Garlic Butter 🧄🧈
While the cheeseburger bombs are baking, combine:
melted butter
minced garlic
fresh parsley
As soon as the buns come out of the oven, brush them generously with the garlic butter.
This is the moment they go from good to I'm eating another one immediately. 😂
Homemade Burger Dipping Sauce
And because these absolutely need a dipping sauce:
½ cup mayonnaise
2 tbsp ketchup
2–3 tbsp finely chopped pickles
1 garlic clove, minced
1 tsp Dijon mustard
½ tsp adobo seasoning
¼ tsp black pepper
Pinch of salt
½ tsp smoked paprika
1 tsp pickle juice, optional
1 tsp garlic powder
Mix everything together until smooth.
For the best flavor, refrigerate for 15–30 minutes before serving.
Tips for Perfect Cheeseburger Bombs
Don't overfill them. I know it's tempting 😂, but too much filling makes them difficult to seal.
Cool the beef first. Hot filling can soften the dough and make shaping difficult.
Seal them really well. Pinch the bottom closed firmly so the cheese stays where it belongs — INSIDE. 🧀
Use whatever melting cheese you love. Cheddar gives classic cheeseburger flavor, while mozzarella gives you that beautiful cheese pull.
Serve them warm. They're at their absolute best when the bun is fresh and the cheese inside is still melted.
Make Them Your Own
This recipe is also really easy to customize.
You can add caramelized onions, chopped pickles, jalapeños or even a little mustard or burger sauce inside.
And if you're feeding kids, you can keep the filling simple with just seasoned beef and cheese.
What to Serve with Cheeseburger Bombs
Serve them with the homemade burger sauce, fries, roasted potatoes, salad, coleslaw or crunchy pickles.
They would also be fantastic for a party platter because they're much easier to serve than individual burgers.
Storage & Reheating
Store leftover cheeseburger bombs in an airtight container in the refrigerator for up to 3 days.
Reheat them in the oven or air fryer until warmed through. The microwave works too, although the outside won't stay quite as nice and soft-crisp.
They can also be frozen after baking. Let them cool completely, wrap individually and freeze in an airtight container.
