A Fast, Buttery and Cheesy Hungarian Snack with No Rising Time


Some recipes prove that you don’t need complicated ingredients or hours in the kitchen to make something everyone will love. These quick Hungarian cheese sticks, or sajtos rúd, are made with simple pantry staples and can be on the table in approximately 35 minutes.

There is no yeast, no rising and no waiting for dough to rest. You simply mix the ingredients, roll out the dough, cover it with cheese, cut it into strips and bake. I originally made these cheese sticks to serve alongside a rich Hungarian mushroom soup. The combination turned an ordinary bowl of soup into a complete, comforting dinner—and the sajtos rúd disappeared very quickly. 😂 They are buttery, tender and slightly crisp around the edges, with plenty of melted cheese on top. Serve them with soup, pack them into lunchboxes or place them on the table when guests arrive. They are also dangerously easy to eat directly from the baking tray.


What Is Sajtos Rúd?

Sajtos rúd means “cheese stick” in Hungarian. These savoury baked pastries are commonly served at family gatherings, celebrations, holidays and casual get-togethers. Unlike crunchy packaged cheese straws, Hungarian sajtos rúd is usually more tender and buttery, with grated cheese baked directly onto the top. There are many different versions. Some are made with yeast, some contain cottage cheese or farmer cheese, and others need time to rest in the refrigerator. This is the quick version. Baking powder gives the dough a little lift, while butter, sour cream and egg yolk create a rich, tender texture without any rising time.

Ingredients

For the Dough

  • 300 g all-purpose flour

  • 1 coffee spoon salt, approximately ½ teaspoon

  • 6 g baking powder

  • 150 g softened butter

  • 1 egg yolk

  • 3 tablespoons sour cream

For the Topping

  • 1 egg yolk

  • 130 g grated cheese


How to Make Quick Hungarian Cheese Sticks

1. Preheat the Oven

Preheat the oven to 180°C/350°F. Line a large baking tray with parchment paper.

2. Combine the Dry Ingredients

Place the flour, salt and baking powder in a large mixing bowl. Stir until everything is evenly combined. Mixing the baking powder into the flour first helps it distribute evenly throughout the dough.

3. Make the Dough

Add the softened butter, egg yolk and sour cream to the flour mixture. Knead everything together until you have a smooth, soft dough. Stop mixing as soon as the dough comes together; overworking it can make the baked cheese sticks less tender. If the dough feels slightly sticky, dust your work surface with a small amount of flour. Avoid adding too much extra flour because the dough should remain soft.

4. Roll Out the Dough

Place the dough on a lightly floured work surface and roll it out to approximately 1 cm thick. Try to roll it into a rectangle so the cheese sticks will be easier to cut evenly.

5. Add the Topping

Brush the entire surface with the second egg yolk. Sprinkle the grated cheese evenly over the top, pressing it down very gently so it adheres to the egg wash.

6. Cut the Cheese Sticks

Using a sharp knife or pizza cutter, cut the dough into strips approximately 1½ cm wide and 8–10 cm long. Carefully transfer the strips to the prepared baking tray, leaving a little space between them.

7. Bake

Bake in the preheated oven for approximately 15 minutes, or until the cheese has melted and the sticks are lightly golden around the edges. Watch them closely near the end because thin cheese sticks can brown quickly.

8. Serve

Allow them to cool on the tray for a few minutes before serving. They are wonderful while still slightly warm, but they also taste delicious at room temperature.


What Kind of Cheese Should I Use?

Choose a cheese that melts well and has enough flavour to stand out against the buttery dough.

Good options include:

  • Hungarian Trappista

  • Medium or old cheddar

  • Gouda

  • Edam

  • Emmental

  • A combination of mozzarella and cheddar

Avoid using only very mild mozzarella because it melts beautifully but may not provide enough flavour. Combining it with cheddar or Gouda works much better.

Tips for Perfect Sajtos Rúd

Use Softened Butter

The butter should be soft enough to mix easily into the flour but not melted. Melted butter can make the dough greasy and difficult to handle.

Don’t Overwork the Dough

Knead only until the ingredients come together. The less you handle the dough, the more tender the finished cheese sticks will be.

Keep the Thickness Even

Roll the dough to an even thickness so all the sticks bake at the same speed.

Use a Pizza Cutter

A pizza cutter makes it quick and easy to create long, straight strips, but a sharp knife works perfectly too.

Watch the Oven

The exact baking time will depend on your oven and the thickness of the dough. Remove the cheese sticks when the topping is melted and the edges are lightly golden.

Change the Topping

You can add sesame seeds, poppy seeds, caraway seeds or a small amount of sweet Hungarian paprika over the cheese before baking.


What to Serve with Hungarian Cheese Sticks

Sajtos rúd is delicious on its own, but it is especially good beside a warm bowl of soup.

Serve it with:

  • Chicken soup

  • Creamy vegetable soup

  • Bean soup

  • Tomato soup

  • Goulash soup

  • A simple salad

  • A savoury breakfast or brunch platter

A rich soup with a few warm cheese sticks can easily become a complete weekday dinner.

Storage

Allow the cheese sticks to cool completely before transferring them to an airtight container. Store them at room temperature for up to two days or in the refrigerator for up to four days. If refrigerated, warm them briefly in the oven before serving to refresh their texture.


Can I Freeze Sajtos Rúd?

Yes. Once completely cooled, place the cheese sticks in a freezer-safe container with parchment paper between the layers. Freeze for up to two months. Reheat them directly from frozen at 180°C/350°F for a few minutes, until warm and lightly crisp again.


The Snack That Saves Dinner

These quick Hungarian cheese sticks are perfect for evenings when you have made soup but feel that dinner still needs a little something extra. With no yeast and no rising time, the dough comes together in minutes. By the time the table is ready and the soup is hot, a tray of buttery, golden sajtos rúd can be coming out of the oven.
