🧁 Ingredients
For the Crepes
500 g (4 cups) all-purpose flour
2 tbsp powdered sugar
4 eggs
1 pinch of salt
2 tsp baking powder
1 L (4 cups) milk — add gradually
For the Cottage Cheese Filling
1 kg (2.2 lbs) semi-fat cottage cheese (farmer cheese preferred)
8 egg yolks
200 ml (¾ cup) sour cream
Seeds from 1 vanilla bean (or 1 tsp vanilla extract)
120 g (1 cup) powdered sugar
Zest of 1 lemon
1 tsp lemon juice
Golden raisins (optional)

🍳 Instructions
1. Make the Crepe Batter
In a large bowl, mix together the flour, powdered sugar, eggs, salt, and baking powder.Add the milk gradually — a little at a time, stirring constantly. If you pour it all in at once, the batter will get lumpy, and you’ll end up frustrated instead of full!When done right, the batter should be smooth, thin, and lump-free.
Lightly grease a nonstick pan (a silicone brush helps spread the oil evenly) and heat it to medium. Pour a small amount of batter into the pan, swirl quickly to spread, and cook each crepe for about 1–2 minutes per side until golden.
2. Prepare the Filling
In a mixing bowl, combine the cottage cheese, egg yolks, sour cream, powdered sugar, vanilla seeds, and raisins (if using). Add the lemon zest and juice for a light, fresh flavor. Mix until smooth and creamy.
3. Fill the Crepes
Spread a generous spoonful of the cottage cheese filling onto each crepe and roll them up tightly.You can serve them as-is, dusted with powdered sugar — or, for an even more traditional twist, place them in a buttered baking dish, top with a little sour cream, and bake for 10–15 minutes at 180°C (350°F) until warm and slightly golden.
