Hungarian Chicken Csikós Tokány with Rizibizi

This creamy Hungarian chicken csikós tokány is a quick, comforting dinner made with tender strips of chicken breast, paprika, peppers, tomato and sour cream. My pork-free version uses duck fat and smoked paprika instead of bacon, and I served it with homemade rizibizi rather than the more traditional pasta.
A Classic Hungarian Dinner—Made My Way
Traditional csikós tokány usually begins with pieces of smoky bacon, which give the sauce its rich flavour. Since I don’t eat pork, I leave the bacon out completely.
Instead, I use a spoonful of duck fat and add a little smoked paprika along with the traditional sweet Hungarian paprika. It still gives the dish that warm, slightly smoky flavour while making it suitable for our family.
I also served it with rizibizi—Hungarian rice with green peas—instead of pasta. I was preparing fish for another member of the family, and rizibizi worked beautifully with both dishes. Sometimes one practical side dish makes family dinner much easier!
The entire meal was ready in around 30–40 minutes, and we had enough left for the next day’s lunchboxes.
What Is Csikós Tokány?
Csikós tokány is a creamy Hungarian meat dish traditionally prepared with bacon, onion, peppers, tomato, paprika and sour cream.
Unlike pörkölt, the meat for a tokány is usually cut into thin strips rather than cubes. The sauce is creamy, gently smoky and full of familiar Hungarian flavours.
It is an excellent choice when you want something comforting but are ready for a little change from the usual pörkölt or paprikás.

Hungarian Chicken Csikós Tokány
Ingredients
Serves 4
1 tablespoon duck fat
1 large onion, finely chopped
500 g (approximately 1.1 lb) chicken breast
2–3 garlic cloves, minced
1 Hungarian wax pepper or mild yellow pepper, chopped
1 medium tomato, chopped
1 tablespoon sweet Hungarian paprika
½–1 teaspoon smoked paprika
1 teaspoon dried marjoram
Salt, to taste
Freshly ground black pepper, to taste
Approximately ½ cup water, or as needed
For the sour cream mixture
200 ml sour cream
1 tablespoon all-purpose flour
A few spoonfuls of the hot cooking liquid
For serving
Prepared rizibizi—Hungarian rice with green peas
Extra sour cream, optional
Fresh parsley, optional
How to Make Chicken Csikós Tokány
1. Prepare the chicken
Cut the chicken breast into thin strips. This shape is characteristic of tokány and also helps the chicken cook quickly and evenly.
2. Cook the onion
Heat the duck fat in a large pan over medium heat. Add the chopped onion and cook until soft and translucent.
3. Add the chicken
Add the chicken strips and cook for several minutes, stirring occasionally, until the chicken changes colour and begins to brown lightly.
4. Add the vegetables and seasoning
Stir in the garlic, chopped pepper and tomato. Season with salt, black pepper and marjoram.
Remove the pan briefly from direct heat before adding the sweet and smoked paprika so the paprika does not burn and become bitter. Mix everything together well.
5. Simmer the tokány
Return the pan to the heat and add approximately ½ cup of water. Cover and simmer gently for about 15–20 minutes, or until the chicken is fully cooked and tender.
Add a little more water during cooking if needed, but do not make the sauce too thin.
6. Prepare the sour cream mixture
In a small bowl, whisk the sour cream with the flour until completely smooth.
Add two or three spoonfuls of the hot liquid from the pan and mix well. This tempers the sour cream and helps prevent it from separating.
7. Finish the sauce
Slowly stir the sour cream mixture into the chicken. Simmer gently for another 2–3 minutes, stirring frequently, until the sauce becomes smooth and creamy.
Do not boil it aggressively after adding the sour cream.
8. Serve
Serve the hot csikós tokány with rizibizi and, if you like, an additional spoonful of sour cream.

My Tips for the Best Csikós Tokány
Use genuine Hungarian sweet paprika if possible, as paprika is one of the main flavours in the dish.
Smoked paprika is stronger than regular paprika, so begin with ½ teaspoon. You can always add a little more, but it should complement the sauce rather than overpower it.
Chicken breast cooks quickly and can become dry, so simmer it only until it is tender and fully cooked.
Always mix the sour cream with the flour until smooth and temper it with some hot cooking liquid before adding it to the pan.

Can I Serve It with Something Other Than Rizibizi?
Absolutely! Csikós tokány is commonly served with pasta, but it is also delicious with:
Nokedli
Steamed rice
Mashed potatoes
Boiled potatoes
Tarhonya
Fresh crusty bread
Rizibizi worked especially well for our family because I could serve the same side dish with both the csikós tokány and the fish I prepared separately.
Storing and Reheating
Store leftover csikós tokány in a covered container in the refrigerator for up to three days.
Reheat it gently on the stovetop or in the microwave. If the sauce becomes too thick, stir in a splash of water before reheating. Avoid boiling the sauce strongly so the sour cream remains creamy.
It also makes a wonderful lunchbox meal. Pack the tokány and rizibizi together in a microwave-safe container and keep refrigerated until lunchtime.
A Quick Hungarian Dinner for Busy Days
This may not be the completely traditional bacon-and-pasta version, but it is still creamy, comforting and full of Hungarian flavour. The duck fat adds richness, the smoked paprika replaces some of the smoky flavour of the bacon, and the rizibizi makes it a practical dinner for the whole family.
Recipes do not always have to remain exactly the same. Sometimes we adapt them to our diets, our families and whatever we have at home—and they can still be absolutely delicious.
