Ingredients (Serves 4):

For the Paprikash:

  • 1 tbsp pork lard or Oil

  • 1 medium onion (180 g), finely chopped

  • 4 garlic cloves, minced

  • 3 bay leaves

  • 1 sweet pepper (80 g), diced

  • 1 tomato (90 g), diced

  • 1 kg peeled potatoes, cut into 3–4 cm chunks

  • 300 g smoked sausage, sliced into 0.5 cm rounds

  • 2 tbsp ground paprika paste (darált paprika krém)

  • 1 tbsp sweet paprika powder

  • 1 tsp ground cumin

  • Salt and pepper to taste

  • 1.2 L water

  • 2 hot dogs, sliced into rounds

  • 4 tbsp instant mashed potato flakes (optional)

For Serving:

  • 4 slices of fresh bread

  • 4 portions of pickled vegetables (savanyúság, e.g., pickled cucumbers or mixed vegetables)

Instructions

1. Prepare the Base:

  • Heat the pork lard in a large pot over medium heat. Add the finely chopped onion, minced garlic, and bay leaves, and sauté for about 7 minutes until softened and fragrant.

2. Add the Vegetables and Sausage:

  • Stir in the diced sweet pepper and tomato, and sauté for an additional 2 minutes.

  • Add the chunks of potato and sliced smoked sausage, and cook for another 3 minutes, stirring frequently.

3. Season and Simmer:

  • Add the ground paprika paste, sweet paprika powder, ground cumin, salt, and pepper. Stir well to coat everything.

  • Pour in the water and bring the mixture to a boil. Reduce the heat to medium and simmer until the potatoes are tender, about 20–25 minutes.

4. Finish with Hot Dogs and Adjust the Sauce:

  • Add the sliced hot dogs to the pot and simmer for an additional 2–3 minutes to heat through.

  • If you prefer a thicker sauce, stir in the instant mashed potato flakes to adjust the consistency.

5. Serve:

  • Serve the paprikash hot with fresh bread on the side and pickled vegetables for the ultimate Hungarian experience.
