Stíriai Metélt – Hungarian Baked Cottage Cheese Noodles

Stíriai metélt is a traditional Hungarian comfort-food favorite made with homemade túró noodles baked in a light, creamy lemon and vanilla filling until beautifully golden. Finished with a generous dusting of powdered sugar, it’s soft, fluffy, slightly sweet, and wonderfully nostalgic.

What makes this dish especially interesting is that the noodles aren’t ordinary pasta — they’re made from túró, flour, egg, and sour cream before being cooked and baked into the creamy filling.

And although it may look like dessert, in Hungary sweet dishes like Stíriai metélt can absolutely be served as the main course, often after a hearty bowl of soup. 🇭🇺❤️

For the Túró Noodles

  • 450 g túró or dry cottage cheese

  • 8 tbsp all-purpose flour

  • 1 large egg

  • 2 tbsp sour cream

  • 2 tbsp powdered sugar

  • Zest of 1 lemon

  • Pinch of salt

For the Creamy Filling

  • 80 g butter

  • 1 tbsp all-purpose flour

  • 250 ml milk

  • 4 tbsp powdered sugar

  • 1 packet vanilla sugar

  • 1 tbsp finely grated lemon zest

  • 4 tbsp sour cream

  • Pinch of salt

  • 2 tbsp raisins, optional

  • 4 large eggs, separated

For Serving

  • Powdered sugar, for dusting

Instructions

  1. Make the túró dough: In a large bowl, combine the túró, flour, egg, sour cream, powdered sugar, lemon zest, and a pinch of salt. Mix until a soft dough forms.

  2. Roll and cut: Lightly flour your work surface and roll out the dough. Cut into short, thick noodle-like strips.

  3. Cook the noodles: Bring a large pot of lightly salted water to a boil. Add the noodles and cook until they rise to the surface and are cooked through. Drain well and set aside.

  4. Make the creamy base: Melt the butter in a saucepan. Stir in 1 tablespoon flour, then gradually whisk in the milk. Cook briefly until smooth and slightly thickened. Remove from the heat and let cool slightly.

  5. Prepare the egg mixture: Separate the eggs. Mix the egg yolks with the powdered sugar, vanilla sugar, lemon zest, sour cream, and a pinch of salt. Stir in the cooled milk mixture. Add the raisins, if using.

  6. Whip the egg whites: Beat the egg whites until stiff peaks form. Gently fold them into the creamy egg mixture, being careful not to deflate them.

  7. Combine: Gently fold the cooked túró noodles into the creamy mixture until evenly coated.

  8. Bake: Transfer to a buttered baking dish and bake at 180°C / 350°F for about 45 minutes, until puffed and beautifully golden brown on top.

  9. Rest: Remove from the oven and let the Stíriai metélt rest for 10–15 minutes before cutting.

  10. Serve: Dust generously with powdered sugar and serve warm. Jó étvágyat! 🇭🇺❤️
