Képviselőfánk – Hungarian Cream Puffs

There are some desserts that instantly take me back to Hungary, and Képviselőfánk is definitely one of them. 🇭🇺❤️ These beautiful Hungarian cream puffs are made from light, airy choux pastry and filled generously with silky vanilla custard and fluffy whipped cream, then finished with a snowfall of powdered sugar.
Képviselőfánk may look like something you would only buy from a pastry shop, but it can absolutely be made at home. The secret is getting the choux pastry just right — golden and crisp on the outside, light and hollow inside, with plenty of room for all that wonderful cream.
This is an old-fashioned Hungarian classic that deserves to be kept alive, and once you make a batch at home, you'll understand why. Just don't expect to eat it neatly — a proper Képviselőfánk should have enough cream to make a little mess! 😃

Ingredients
For the Choux Pastry
150 g all-purpose flour
150 g butter
150 ml water
4 g salt
6 g sugar
4 large eggs, beaten
For the Filling
Vanilla pastry cream or thick vanilla custard
Whipped cream
For Finishing
Powdered sugar, for dusting
Steps
1. Prepare the choux pastry
Add the water, butter, sugar and salt to a saucepan. Heat until the butter has completely melted and the mixture comes to a gentle boil.
2. Add the flour
Add the flour all at once and stir vigorously. Continue cooking and stirring for a few minutes until the dough forms a smooth ball and pulls away from the sides of the pan.
3. Cool the dough
Transfer the dough to a mixing bowl and allow it to cool for about 10–15 minutes. It should still be warm, but not hot.
4. Add the eggs
Beat the eggs separately, then gradually add them to the dough, mixing well after each addition. The finished dough should be smooth, glossy and soft enough to pipe while still holding its shape.
5. Shape the cream puffs
Preheat the oven to 200°C / 390°F convection. Line a baking sheet with parchment paper. Pipe or spoon approximately 10–12 large mounds of dough onto the baking sheet, leaving space between them to expand.
6. Bake
Bake for approximately 30–35 minutes, until puffed and golden. Do not open the oven during this stage or the pastries may collapse.
7. Dry the pastry shells
Reduce the oven temperature to 160°C / 320°F. Leave the oven door slightly ajar and allow the cream puffs to dry for another 15 minutes.
8. Cool
Remove from the oven and transfer to a wire rack. Allow the pastry shells to cool completely before filling.
9. Fill the Képviselőfánk
Cut the top from each cream puff. Pipe or spoon a generous layer of vanilla custard into the bottom, followed by a layer of whipped cream.
10. Finish and serve
Place the pastry tops back on and dust generously with powdered sugar. Serve and enjoy!
