Traditional Hungarian vizes zsemle are simple bakery-style water rolls with a beautifully golden, slightly crisp crust and a soft, fluffy interior. Ingredients
Makes approximately 8–10 rolls
500 g (about 4 cups) all-purpose flour
330 ml (1⅓ cups + 1 tbsp) lukewarm water
8 g fresh yeast or about 2.5–3 g dry yeast
10 g (about 1¾ tsp) salt
5 g (about 1¼ tsp) granulated sugar
1 tsp 10% vinegar
Note: Hungarian 10% vinegar is stronger than the standard 5% white vinegar commonly sold in Canada and the U.S. If using 5% vinegar, you can use approximately 2 teaspoons.
How to Make Hungarian Vizes Zsemle
1. Make the dough
Add the flour, yeast, sugar, salt, vinegar and lukewarm water to a large mixing bowl.
Mix until the ingredients come together, then knead until you have a smooth and elastic dough. You can knead it by hand or use a stand mixer fitted with a dough hook.
2. First rise
Shape the dough into a ball, cover the bowl and leave it in a warm place for approximately 1 hour, or until noticeably risen.
3. Divide and shape
Transfer the dough to your work surface and divide it into 8–10 approximately equal portions.
Shape each piece into a smooth, tight ball by bringing the edges underneath and creating tension across the surface.
Place the rolls onto a parchment-lined baking sheet, leaving some space between them.
4. Final proof
Cover the shaped rolls and allow them to rest and rise again while the oven preheats.
5. Bake covered
Preheat your oven to 230°C / 445°F.
Place the rolls in the oven and cover the baking tray with a second deep baking tray.
Bake covered for approximately 15 minutes.
This helps trap steam around the rolls and creates that characteristic crust.
6. Finish uncovered
Remove the covering tray and reduce the oven temperature to 210°C / 410°F.
Continue baking uncovered for approximately 12 minutes, or until the rolls are beautifully golden brown.
Let them cool slightly on a wire rack before serving.
The Secret to That Bakery-Style Crust
The clever part of this recipe is the covered first stage of baking.
As the dough heats, moisture becomes trapped underneath the second baking tray. That creates a steamy environment similar to the steam used in professional bread ovens.
Once the cover is removed, the rolls can finish browning and develop their gorgeous golden crust.
How to Serve Vizes Zsemle
For me, these rolls don't need anything complicated.
Slice one while it's still slightly warm and try it with butter, cheese, Hungarian-style salami, sliced tomato or fresh paprika. They're also wonderful with homemade jam or honey for a sweet breakfast.
And of course, they make fantastic little sandwiches for school or work lunches.
Storage
Like most simple bakery rolls without preservatives, vizes zsemle is at its absolute best on the day it's baked.
Keep leftover rolls in a bread bag or airtight container at room temperature for 1–2 days. You can warm them briefly in the oven before serving.
They also freeze beautifully. Once completely cooled, freeze them in an airtight freezer bag and reheat when needed.
