Hungarian Finomfőzelék – Creamy Peas, Carrots and Kohlrabi
Servings: 4

If the word *finomfőzelék* immediately brings back frightening memories of the Hungarian school cafeteria, this homemade version may completely change your mind. Sweet peas, carrots and kohlrabi come together in a lightly sweet, creamy sauce that tastes nothing like the watery menza dish many of us remember.
My mom never made finomfőzelék, so I prepared it for the first time to introduce my children to one of the retro Hungarian foods from my childhood. I even had to look up the recipe—and I was surprised by how good it was! Served with pan-seared salmon, it became a colourful, comforting family dinner that even Tom loved.
Servings: 4
Ingredients
2 carrots, approximately 300 g total
1 kohlrabi, approximately 300 g
60 g butter
1 bunch fresh parsley, stems and leaves separated
300 g frozen green peas
Salt, to taste
Ground white pepper, to taste
1 heaped teaspoon granulated sugar
Water, as needed
400 ml milk
200 ml heavy or cooking cream
2 heaped tablespoons all-purpose flour
Instructions
1. Prepare the Vegetables
Peel the carrots and kohlrabi, then cut them into small, evenly sized cubes. Finely chop the parsley stems and leaves, keeping them separate.
2. Sauté the Carrots
Melt the butter in a large pot over medium heat. Add the diced carrots and chopped parsley stems. Cook for a few minutes, stirring occasionally.
3. Add the Kohlrabi
Add the diced kohlrabi and continue cooking for another 2–3 minutes. The vegetables do not need to brown.
4. Add the Peas and Seasonings
Add the frozen peas, salt, white pepper, sugar and most of the chopped parsley leaves. Reserve a little parsley for serving.
5. Cook the Vegetables
Pour in just enough water to barely cover the vegetables. Bring to a gentle boil, reduce the heat and simmer for approximately 15–20 minutes, until the vegetables are tender but still hold their shape.
6. Prepare the Thickener
Place the flour in a bowl and gradually whisk in a small amount of the cream until completely smooth. Add the remaining cream and mix well.
Whisk a ladleful of hot cooking liquid into the cream mixture to temper it.
7. Finish the Finomfőzelék
Slowly pour the cream mixture into the pot while stirring continuously. Add the milk and mix well.
Return the főzelék to a gentle simmer and cook for another 3–5 minutes, stirring regularly, until the sauce thickens and the flour is fully cooked.
Taste and adjust the salt, white pepper or sugar if necessary.
8. Serve
Finish with the reserved fresh parsley and serve hot with salmon, fasírt, fried eggs, roast chicken, grilled fish or your favourite vegetarian topping.
Recipe Notes
Cut the carrots and kohlrabi into similar-sized pieces so they cook evenly.
Add only enough water to barely cover the vegetables. Too much water will make the főzelék thin.
Frozen peas can be added directly to the pot without thawing.
Whisk the flour with cold cream before adding it to prevent lumps.
Keep the heat gentle after adding the milk and cream.
The vegetables should be tender but not falling apart.
Add a splash of milk when reheating if the sauce becomes too thick.
Store leftovers in an airtight container in the refrigerator for up to three days.
Freezing is not recommended because the dairy sauce may separate.
